1 cup basmati rice
1/2 medium onion, chopped
3 tbsp butter
1 tbsp lemon juice
1/2 cup grated cheddar and/or parmesan cheese
salt
pepper
- Bring water to boil over high heat.
- Add rice and onion and boil for 16 minutes.
- While the rice is cooking, cut the butter into small pieces and mix in a medium bowl with the lemon juice.
- When the rice is done, drain it, but reserve 1/4 cup of the cooking liquid.
- Add the hot rice mixture and reserved liquid to the butter mixture. Stir to melt the butter.
- Add the cheese and stir.
- Season with salt and pepper.

I didn't know you had a food blog too! Very cool. I will *have* to make this for Erin. She loves cheese and rice. So much better than just melting velveeta over the top.
