Mango quinoa

1/2 cup quinoa
1 cup water
1 cup mango salsa
  1. Rinse quinoa well. Three or four washes should do the trick to get rid of the bitter saponins.
  2. Bring quinoa and water to a boil, reduce heat, and simmer for 20 minutes.
  3. Add salsa and bring to a boil.
I serve this over a bed of spinach, with a topping of some more mango salsa. Yum!

What bitter parts are you getting rid of? When I made quinoa I didn't find anything about this step in my recipe... but we didn't love the result. Maybe this is why? Thanks :)

Prepared quinoa (out of a box) is already washed, and doesn't require you to wash it before cooking. When I was googling how to prepare quinoa, several sources stated that bulk quinoa is coated in a bitter substance that should be washed off before cooking.

I haven't tried it without the wash step, but it's similar in flavour and texture to an al dente couscous.
